Classic Spaghetti Aglio e Olio
Classic Spaghetti Aglio e Olio
recipe
A simple and delicious Italian pasta dish made with garlic, olive oil, and chili flakes. Perfect for a quick weeknight dinner. Preparation Time: 20 minutes
Serving Size: 2 servings
Ingredients:
- 200g spaghetti
- 4 cloves garlic, thinly sliced
- 60ml extra virgin olive oil
- 1 teaspoon red chili flakes
- Salt, to taste
- Fresh parsley, chopped (for garnish)
- Grated Parmesan cheese (optional)
Instructions:
1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water and then drain the spaghetti.
2. In a large skillet, heat the olive oil over medium heat. Add the sliced garlic and sauté until it becomes golden brown, about 2-3 minutes. Be careful not to burn the garlic.
3. Add the red chili flakes to the skillet and stir for about 30 seconds to release their flavor.
4. Add the drained spaghetti to the skillet and toss to coat it in the garlic oil. If the pasta seems dry, add a bit of the reserved pasta water until you reach the desired consistency.
5. Season with salt to taste and toss again.
6. Serve hot, garnished with chopped parsley and grated Parmesan cheese if desired.
