A delicious chocolate cake featuring a thick layer of sea buckthorn mousse and chocolate frosting. This gluten-free cake is easy to make with low-lactose ingredients, perfect for any occasion. Preparation Time: 2 hours

Ingredients
Cake Base:- 7 eggs
- 2 dl sugar
- 100 g dark chocolate
- 180 g almond flour
- 1 tbsp Bacardi
Sea Buckthorn Mousse:
- 2 dl whipped cream
- 300 g plain cream cheese
- 1 dl sea buckthorn juice
- 1.5 dl sugar
- 2 tsp vanilla sugar
- 5 gelatine leaves
Chocolate Frosting:
- 2 dl sugar
- 1 dl cocoa powder
- 2 dl cream
- 4 egg yolks
- 300 g butter
- 4 egg whites
- 2 tsp vanilla sugar
Instructions
1. Prepare the Cake Base:- Whip the egg whites until stiff peaks form.
- Melt the dark chocolate and let it cool slightly.
- Beat the egg yolks and sugar until fluffy, then gradually add the melted chocolate.
- Gently fold in the Bacardi and almond flour.
- Pour the batter into a greased baking pan and bake at 160°C (320°F) for about 30-35 minutes. Check for doneness with a toothpick.
2. Make the Sea Buckthorn Mousse:
- Whip the cream and mix it with the cream cheese.
- Add the sea buckthorn juice and sugars.
- Soak the gelatine leaves in cold water for about 5 minutes, then dissolve in a small amount of sea buckthorn juice and mix into the whipped cream mixture.
3. Prepare the Chocolate Frosting:
- In a saucepan, combine sugar, cocoa powder, cream, and egg yolks. Heat to a simmer while stirring continuously, then allow to cool.
- Whip softened butter until fluffy, then gradually add the cooled mixture. Incorporate the egg whites one at a time while whisking well, then add the vanilla sugar.
4. Assemble the Cake:
- Cut the cooled cake base in half. Spread the sea buckthorn mousse on one layer and place the second layer on top.
- Cover the cake with chocolate frosting and decorate as desired.
5. Let the cake chill in the refrigerator before serving.
