Serving Size: 10-12 donuts
Ingredients:
- For the Donuts:
- 2 3/4 cups all-purpose flour
- 3/4 teaspoon baking powder
- A pinch of nutmeg
- 3/4 cup sugar
- 30 grams butter (plus a little for greasing)
- 1 banana
- 1 egg
- 1 cup milk
- For the Caramel Glaze:
- 1 cup brown sugar
- 50 grams butter
- 60 ml cream
- 2 cups powdered sugar
- Toasted almond slices or Maldon salt for topping
Instructions:
1. Bring all ingredients to room temperature and grease a 12-cup donut pan.
2. Preheat the oven to 180°C (350°F).
3. In a bowl, combine flour, baking powder, nutmeg, and sugar.
4. Melt the butter and let it cool slightly.
5. Mash the banana in a bowl with a fork, then add the egg and milk, mixing until smooth.
6. Combine the banana mixture with the dry ingredients and mix quickly, being careful not to overmix.
7. Spoon the batter into a piping bag and pipe it into the donut pan, filling each cavity halfway.
8. Bake in the oven for about 10 minutes or until the edges of the donuts are lightly browned. Let cool on a wire rack.
9. To make the glaze: In a saucepan, combine brown sugar, butter, and cream. Allow to melt slowly, increasing heat once combined. Let it bubble without stirring for about a minute, then remove from heat.
10. Stir powdered sugar into the hot glaze and whisk until smooth.
11. Dip the donuts into the warm glaze and let them set on a wire rack. Decorate with almond slices or a sprinkle of salt.
12. Store at room temperature.
