Ingredients:
- 1 liter chicken or vegetable broth - 200 g rice noodles
- 200 g shrimp (peeled)
- 100 g soft tofu cubes
- 1 medium carrot (sliced)
- 1 red bell pepper (sliced)
- 100 g peas (fresh or frozen)
- 3 tbsp soy sauce
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 2 tbsp fresh cilantro (chopped)
- 1 chili (chopped, optional)
- Salt and pepper to taste
Instructions:
1. Boil the chicken or vegetable broth in a pot. 2. Add the sliced carrot and bell pepper to the broth and cook for about 5 minutes.
3. Add the rice noodles and cook according to the package instructions.
4. Stir in the shrimp, tofu, peas, soy sauce, fish sauce, and lime juice. Allow to simmer for another 2-3 minutes.
5. Season with salt, pepper, and chili if desired.
6. Serve the soup hot, garnished with fresh cilantro.
